Manic Monday

It's just another manic Monday, but the weekend was a good one.  For those that celebrate Easter, I hope it was a good one.  My idea of Easter is heading to brunch at Roaring Fork and that is exactly what I did.  Grapefruit mimosas, green chili pork enchiladas, creme brulee french toast, fried chicken, prime rib....I could go on and on. 

The rest of the weekend was spent hanging out with good friends and spending some quality time with mom.  As busy as the weekend was, I still got some rest & relaxation, now bring on this week!
